Our Marination 101 course focuses on the basics of marination technology and understanding the key points needed to build a successful marination program. This course is intended to give participants tangible and actionable items to take back to their respective operations to improve product quality and profitability.
Topics include:
- Defining the terms “marination” and “marinade” from a regulatory and end-user standpoint.
- Why marination is important to the processor, various customer types, and the end consumer.
- Understanding the ingredients we use, why we use them, and how they interact with each other.
- The importance of temperature control with respect to yields and finished product attributes.
- Understanding injection and vacuum tumbler technologies, how they function, and the limitations each has with respect to final product expectations.
This course is designed to be an interactive discussion between the participant and discussion leader and less of a classroom-style lecture. Participant interaction and questions are preferred, especially as they pertain to “real-life” scenarios. This 4-6 hour course is a combination of classroom topics and hands-on application.
Standard clothing is required. Pants (no shorts allowed), t-shirts and/or polo shirts are acceptable. If you have steel-toed shoes, we encourage you to bring them as a portion of the course is held on our production floor.
Instructor
Our Marination 101 Short Course is led by our staff Application Specialist and Meat Scientist, Jason Jordan. Jason is recognized as an industry expert in the field of protein marination and marination technology. His real-world approach to the topic is based on his academic and industry experiences as a classically trained meat scientist, with 15+ years of experience in R&D and new product development, plant operations management and as a Process Consultant for food purveyors in nearly 30 countries throughout the world.
