Event Details

NOTE: The Thermal Processing class will end by 5 pm on Wednesday. Thursday morning is optional and will include time for you to bring your specific projects and questions for our team to address and pick up the jerky you make on Wednesday.

Our Thermal Processing 101 class is designed to give oven operators, maintenance technicians, supervisors, and other key personnel the knowledge they need to effectively understand and operate an industrial smokehouse, dehydrator, or steam cabinet.

Through a combination of classroom training and hands-on experience, your team will learn:

  • Essential terms and definitions (like breakpoint and delta)
  • Proper oven loading
  • Recipe development
  • Maintenance tips
  • Graphing and understanding data
  • Natural and liquid smoke applications
  • Oven parts and what they do
  • Programming
  • CIP and cleaning
  • Preventative maintenance
  • Airflow and how it affects product

Schedule

Day 1:

  • 1pm – Class begins
  • 5pm – Day ends

Day 2 OPTIONAL:

  • 8am – Review your specific projects and questions and pick up the jerky you made on Wednesday

Details

Standard clothing is required. Pants (no shorts allowed), t-shirts and/or polo shirts are acceptable. A portion of this course is held in our Innovation Center — a small food processing plant. Warm clothes or a jacket and steel-toed shoes are recommended.
